ASSESSMENT D – PROJECT
INSTRUCTIONS (for assessments not embedded within the LMS)
The assessment must be written using an industry standard software package such as Microsoft
Word, Excel, PowerPoint, etc.
Name the file using the assessment task number and then save your file.
Ensure your submission identifies the unit code and title, the assessment task number and the name
of the assessment at the top of the page. Alternatively, you may place this information in the
document header.
Add your name and student number to the header or footer on every page.
On completion, submit your assessment to your assessor via the LMS.
Learner assessment guide and evidence
This assessment requires you to develop, implement, monitor and evaluate a food safety
program.
You are required to do the following.
Complete Tasks 1, 2, 3, 4 and 5 in Assessment D.
Answer all the questions.
Tasks and responses to all questions in this assessment should be based on your workplace
or training environment’s policies and procedures, operational activities, menus, recipes, and
any other information or organisational requirements relating to food safety.
The food safety program should incorporate commonwealth, state/territory and local
government legislative requirements.
Assessor notes
This assessment is to be completed as a group assessment as in many medium to large
hospitality organisations, a food safety team will develop, monitor and review the food safety
program.
It is recommended that an operational area in the business is selected and roles are allocated
to individual members or smaller groups within the team.
An example of how to structure the assessment is provided below. This is a suggestion only
and assessors should consider delivery methods, the unit of competency’s required outcomes,
the needs of their learners and organisational requirements when determining a suitable
method of assessment.
All questions in the assessment tasks are answered by individual team members based
on their skills and knowledge and results from completion of individual or team tasks.
Tasks 1.1 to 1.6 are completed individually by each team member.
The review of food safety policies and procedures in Task 1.7 is completed by the team.
Components of the outlet’s menu are allocated amongst the team. Tasks 2.1 to 2.4 are
completed by individual team members or in small groups.
Identification of training needs and development of training programs and review
schedules in Tasks 2.5 to 2.7 is undertaken by the team.
The cover page developed in Task 2.8 should incorporate all individual components of
the food safety program developed by the team in previous tasks to create an organisational
food safety program for the selected outlet.

The food safety program can be implemented and monitored as a complete system by
the whole team. Alternatively, individual members are responsible for implementing and
monitoring the components they developed in earlier tasks.
Task 4 should be completed by the team. The team can complete an internal audit using
existing audit procedures and documentation, or participate and assist in an internal or
external audit conducted by others.
